Job Description Our Client is a well-established Cantonese cuisine, Fine Dining restaurant in Paris, France. The Chefs use traditional tastes , blended with local influences and modern techniques keeping its authentic culinary style and serving dishes that are inspired by Southeast China’s culinary traditions. To complete the team we are looking for SOUS CHEF BBQ Requirements Assist the Executive Chef in overseeing the daily operation of the Chinese BBQ department Prepare and cook high-quality Chinese BBQ dishes using traditional methods and techniques. Manage a team of chefs and ensure that all dishes are prepared and served to a high standard. Order and manage inventory, including controlling food costs and waste. Adhere to food safety regulations and maintain a clean and organized kitchen. Assist in menu planning and recipe development. Train and mentor junior chefs. Work closely with the front-of-house team to ensure smooth and efficient service to guests. Have a passion for Chinese BBQ cuisine and extensive experience working in a high-volume kitchen. Have strong leadership skills and be able to work effectively as part of a team. SKILLS Knowledge of the different cuts of meat and how to prepare them: Char Siu with pork but also know how to prepare other meats such as chicken, beef, and duck. Knowledge of marinades and sauces Grilling and roasting techniques Carving and presentation skills Knowledge of traditional cooking methods, such as using a Chinese roasting rack, using different types of wood for smoking and roasting, and traditional way of making the marinades. Creativity and ability to adapt recipes and flavors to local taste. Strong attention to detail, as consistency in taste and presentation is key in high-end Chinese BBQ. Good time management and organization skills.
