Established in 1872, our beautifully restored brewery blends more than 150 years of history with an ambitious vision for the future. Supplied by our own pristine alpine spring water well beneath the brewery, we produce award-winning beers, spirits and liqueurs enjoyed across Australia.
Last St has become far more than a brewery. We’ve built one of regional Australia’s leading tourism destinations, earning multiple Gold Medals at the Victorian Tourism Awards while continuing to push the boundaries of brewing, distilling and hospitality.
We’re looking for an exceptional Head Brewer to help lead the next chapter of our journey.

About the Role
As a key member of our leadership team, you’ll take ownership of all brewing operations, overseeing everything from recipe development and production through to packaging, quality assurance and continuous improvement.
This is an opportunity to leave your mark on a brewery with genuine national and international ambitions. You’ll help shape our beer portfolio, lead an experienced production team and work closely with the owners to continue building a brewery recognised for exceptional quality, innovation and visitor experiences.
Beyond production, you’ll have the opportunity to become one of the faces of Last St Brewing, representing the brewery at festivals, trade events, collaborations and industry opportunities. We believe the people behind our beers are the best people to tell their story, so you’ll play an important role in sharing our passion, building relationships and helping grow the Last St brand.
Responsibilities
- Lead all brewery production and day-to-day operations.
- Develop and refine recipes across our core and seasonal ranges.
- Drive innovation while maintaining exceptional quality and consistency.
- Manage brewing schedules, production planning and inventory.
- Oversee cellar operations, packaging and quality assurance.
- Lead, mentor and develop the brewing team.
- Collaborate with our Head of Innovation, sales team and owners on new product development and long-term strategy.
- Represent Last St at festivals, trade events and industry opportunities.
- Ensure compliance with food safety, quality and workplace safety standards.
About You
You’ll ideally be someone who:
- Has commercial brewing experience.
Is passionate about producing world-class beer.
- Leads by example and enjoys mentoring others.
- Is organised, proactive and highly motivated.
- Thrives in a fast-paced, hands-on environment.
- Enjoys connecting with customers and the broader brewing community.
Is driven to continually improve systems, quality and efficiency.
- Formal brewing qualifications are highly regarded but not essential for the right candidate.
