THE OPPORTUNITY

We are looking for an experienced Beverage Manager to lead the full beverage operation at CLAP House Ibiza.

The role starts in November 2026 at CLAP Dubai, where you will join the team and train on a local contract, before moving to Ibiza on a fixed-discontinuous contract. CLAP Dubai is a fine-dining Japanese restaurant in the heart of DIFC. Its concept combines authenticity with innovation, with views of the Burj Khalifa from an open-air terrace, an open kitchen, a bar and a hidden speakeasy, Ongaku. You will report to the General Manager of Ibiza and to the Corporate Bars Manager.

WHAT YOU’LL DO

• Beverage operations & stock: own the full beverage programme (spirits, beer, softs, wine and cellar): par levels, ordering, receiving, FIFO rotation, monthly inventories and variance reconciliation.
• Menu & product: create the cocktail and wine offer with recipes, specs, costings and presentation guides, working with the wine team and suppliers on quality, margin and stock depth. Train the team on product knowledge and consistent quality.
• Financial performance: report revenue, beverage cost %, variances, wastage and best/worst sellers; spot issues early and act on them. Prepare the beverage budget, contribute to forecasting and drive sell-through of slow-moving and overstocked items.
• Guest experience & sales: design signature serves, rituals and events true to the CLAP brand. Grow average spend through upselling, premium and bottle sales, wine recommendations and VIP service.
• Team & compliance: recruit, train, schedule and coach your team, handle conflicts proactively, and maintain beverage SOPs in line with hygiene, safety and alcohol regulations.

WHAT WE’RE LOOKING FOR

Essential

· 3+ years as Beverage Manager in a high-volume, premium venue

· Deep knowledge of cocktails, spirits and wine, with proven stock and cellar management

· Solid costing, purchasing and financial reporting skills

· Track record of growing sales and creating unique guest experiences

· Solid knowledge of hygiene, safety and alcohol-service regulations

· Fluent Spanish and English

· Genuine passion for guest experience

· Availability to travel to Dubai for training

Nice to have

· WSET or similar certification

· An additional language
