Chief Butcher — Relocate to Hong Kong | Feather & Bone

Feather & Bone is Hong Kong's premium grocer and restaurant concept, with 12 outlets across the city. Launched by the founders of the popular "Three Butchers" online deli, we bring top-quality meats sourced directly from Australian and UK farmers to Hong Kong — hand-cut daily by our butchers, both in-store and through our online shop.

We're looking for an experienced, hands-on Chief Butcher to relocate to Hong Kong and take the lead across our retail and restaurant butchery operations. This is a rare opportunity for a seasoned butchery professional to run a growing, award-winning department in one of Asia's most exciting food cities — sourcing, training, and craft all in one role.

What you'll do

- Lead and grow our butchery team across all outlets, setting the standard for quality, hygiene, and freshness

- Plan and oversee group-wide production: meat cutting, poultry, portion control, burger manufacturing, mincing and dicing

- Own costing, yield, and wastage across the department, delivering against agreed budgets and KPIs

- Work hands-on at the block, leading by example on technique and standards

- Partner with our chefs on menu development and new product ideas

- Run and grow our in-store butchery classes program

- Report on progress at fortnightly management meetings and manage team scheduling

- Be the face of the department for customers — recommending cuts, advising on cooking methods and ingredients, and promoting new products

What we're looking for

- Minimum 10 years' experience in butchery and restaurants, ideally with retail exposure

- Proven experience managing a butchery team or department

- Familiarity with Australian and UK meat producers and farmers

- Strong commercial sense — comfortable owning budgets, costs, and headcount

- Excellent customer service instincts and a genuine passion for great produce

- A culinary diploma or equivalent qualification is a plus

- A positive, hands-on, "can-do" attitude and the ability to thrive in a fast-paced environment
