Lead an Exceptional Hospitality Experience

Our client, a luxury boutique 5-star hotel and vineyard on the beautiful Mornington Peninsula, is seeking an experienced, passionate and commercially driven Restaurant Manager to lead its restaurant operations and deliver exceptional guest experiences.

Set amongst the vineyards of the Mornington Peninsula, this exceptional property offers a unique hospitality environment where luxury accommodation, outstanding food, premium wine and genuine hospitality come together.

The property features a prestigious restaurant recognised with two hats from the Australian Good Food Guide, led by an internationally renowned and celebrated chef.

This is an exciting opportunity to work alongside an exceptional culinary team and lead a restaurant with an established reputation for quality and excellence.

We are looking for a natural leader who understands luxury hospitality, takes pride in delivering personalised service and has the energy, personality and vision to inspire a high-performing team.

The Opportunity

You will take responsibility for the overall restaurant operation, ensuring consistently high standards across service, people, product and profitability.

Key responsibilities include:

• Leading, motivating and developing the front-of-house team.
• Delivering exceptional and memorable dining experiences.
• Maintaining the highest standards of luxury service and attention to detail.
• Working closely with the Executive Chef and wider hotel management team.
• Driving restaurant revenue and achieving financial targets.
• Managing labour costs, rostering and operational budgets.
• Building a positive team culture focused on accountability and hospitality.
• Ensuring consistently outstanding guest experiences.

About You

You are an experienced hospitality professional with a background in luxury restaurants or hotels. You will bring:

• Proven experience as a Restaurant Manager or senior hospitality leader within a luxury restaurant or hotel environment.
• A genuine passion for food, wine and exceptional service.
• Strong leadership and people management skills.
• Commercial awareness and a sound understanding of restaurant profitability.
• Excellent communication and organisational skills.
• The ability to lead from the front in a hands-on environment.
• A positive attitude, strong work ethic and commitment to excellence.

Previous luxury restaurant or 5-star hotel experience is essential.

Experience in premium dining, hatted restaurants, winery hospitality or luxury boutique hotels will be highly regarded.
