The Role

We are seeking an experienced Senior Pastry Chef to lead pastry and dessert production, menu development, kitchen operations, quality standards, team training, cost control, and culinary innovation.

The ideal candidate will combine advanced pastry expertise with strong leadership, creativity, technical precision, and operational discipline to deliver consistently exceptional desserts, pastries, breads, and confectionery products while maintaining high standards of food safety, presentation, and efficiency.

Key Responsibilities
  • Lead daily pastry and bakery operations while maintaining high standards of quality and consistency.
  • Plan, organize, and supervise pastry production according to menus, forecasts, events, and operational requirements.
  • Develop and execute pastry menus aligned with the culinary concept, guest profile, seasonality, and commercial objectives.
  • Create innovative desserts, pastries, cakes, breads, chocolates, confections, and specialty products.
  • Develop recipes and standardized production specifications for all pastry products.
  • Conduct recipe testing, trials, tastings, and product evaluations before menu implementation.
  • Maintain consistency in flavor, texture, appearance, portion size, and presentation.
  • Develop plated desserts, buffet desserts, petit fours, afternoon-tea products, pastries, and celebration cakes where applicable.
  • Collaborate with Executive Chefs and Culinary teams on dessert menus and food-and-pastry pairings.
  • Develop seasonal and special-event pastry offerings.
  • Support private dining, weddings, banquets, corporate events, celebrations, and VIP requirements.
  • Prepare customized desserts for special occasions, dietary requirements, and guest preferences.
  • Oversee production schedules to ensure all pastry products are completed on time.
  • Plan daily and weekly production based on forecast demand, reservations, events, and historical consumption.
  • Allocate production responsibilities across pastry team members.
  • Coordinate workflow between pastry preparation, baking, finishing, decoration, and service.
  • Ensure efficient use of kitchen space, equipment, labor, and ingredients.
  • Monitor production volumes and adjust output according to demand.
  • Maintain accurate recipes, preparation procedures, production sheets, and technical specifications.
  • Ensure appropriate mise en place and preparation standards across pastry stations.
  • Oversee preparation of doughs, creams, custards, mousses, fillings, sauces, glazes, chocolates, frozen desserts, and other pastry components.
  • Ensure correct baking, cooking, chilling, freezing, tempering, proofing, and finishing techniques.
  • Monitor oven temperatures, proofing conditions, refrigeration, freezing, and other critical production parameters.
  • Maintain high standards for pastry decoration, finishing, plating, and visual presentation.
  • Ensure proper use and maintenance of molds, piping equipment, mixers, ovens, blast chillers, refrigeration, and other pastry equipment.
  • Conduct routine equipment checks and report maintenance requirements promptly.
  • Maintain appropriate storage conditions for ingredients and finished products.
  • Ensure correct labeling, dating, storage, and stock rotation of pastry ingredients and products.
  • Monitor ingredient freshness, quality, and availability.
  • Inspect incoming pastry ingredients and communicate quality concerns to Procurement or management.
  • Work with Procurement to source high-quality flour, chocolate, dairy, fruits, nuts, specialty ingredients, and other pastry products.
  • Evaluate suppliers based on quality, consistency, availability, pricing, and service performance.
  • Support supplier tastings and product evaluations.
  • Manage pastry inventory and minimize shortages, overstock, spoilage, and waste.
  • Monitor food costs and ingredient usage across pastry operations.
  • Establish appropriate portion controls and production standards.
  • Analyze recipe costs and contribute to menu pricing and profitability decisions.
  • Identify opportunities to improve pastry margins without compromising quality.
  • Monitor production waste, breakage, rejected products, and overproduction.
  • Lead and supervise pastry chefs, pastry cooks, bakers, decorators, commis, and kitchen assistants.
  • Assign duties and responsibilities according to production requirements and team capabilities.
  • Train and coach pastry team members in technical skills, recipes, hygiene, safety, and presentation.
  • Develop structured training programs for pastry techniques and production standards.
  • Conduct regular skills assessments and provide constructive performance feedback.
  • Support recruitment, onboarding, and development of pastry team members.
  • Establish clear standards for kitchen discipline, organization, cleanliness, and professional conduct.
  • Maintain effective communication between pastry, culinary, service, procurement, and management teams.
  • Conduct quality checks throughout production and before products are released for service.
  • Identify defects in texture, flavor, appearance, freshness, or presentation and implement corrective actions.
  • Ensure all pastry products meet established quality specifications before service.
  • Maintain strong food-safety, hygiene, sanitation, allergen-control, and occupational-safety standards.
  • Ensure compliance with applicable food-safety regulations and company procedures.
  • Maintain appropriate allergen identification and controls for pastry products.
  • Develop and maintain procedures for cross-contamination prevention.
  • Support food-safety inspections, audits, and corrective-action programs.
  • Monitor guest feedback and identify opportunities to improve pastry products and service.
  • Respond professionally to quality concerns, complaints, and special pastry requests.
  • Research emerging pastry techniques, ingredients, equipment, presentation styles, and culinary trends.
  • Explore developments in chocolate, confectionery, fermentation, plant-based pastry, alternative ingredients, and modern dessert techniques.
  • Benchmark pastry programs, products, and presentation standards within relevant hospitality and culinary markets.
  • Maintain relationships with specialist pastry suppliers, chocolatiers, artisans, and culinary partners.
  • Support pastry demonstrations, tastings, workshops, and guest-facing culinary experiences.
  • Prepare management reports covering production, quality, inventory, costs, waste, staffing, and improvement opportunities.

Ideal Candidate

The successful candidate should have strong experience in pastry, baking, confectionery, fine dining, luxury hospitality, hotels, resorts, restaurants, or premium food production, preferably within internationally recognized culinary environments.
